Ever wonder what to do with the leftover pumpkin from the can? I had that dilemma the other day when I made my Pumpkin Oatmeal Chocolate Chip Cookies! I had a bunch of leftover pumpkin that I didn’t want to throw out, so I looked up Smoothie Recipes and here’s what I found….
PUMPKIN SPICE SMOOTHIE!
Ingredients
One 15-ounce can pumpkin puree
One 12-ounce can evaporated milk
1/2 cup maple syrup
1 tablespoon plus 1 teaspoon instant espresso powder
2 teaspoons pumpkin pie spice
2 teaspoons pure vanilla extract
4 cups ice
Directions
Combine the pumpkin puree, evaporated milk, maple syrup, espresso powder, pumpkin pie spice, vanilla extract and ice in a blender and blend on high until completely blended and smooth. Pour and serve immediately.

I’m learning to like pumpkin more and more! I added extra pumpkin spice because I like the cinnamon and nutmeg flavors. I also added a tiny bit of whey protein powder to give it an extra boost as a breakfast shake. This would be a great drink to make on Thanksgving morning before your workout and to stave off the hunger waiting for the Turkey to be done. Enjoy!
