Flourless Peanut Butter Chocolate Chip Muffins

I made these mini muffins the other night.  So quick and easy and yummy!  They have no refined sugar, flour or oil and they are under 100 calories.  Perfect little bite for when you are craving something sweet.

Ingredients:

  • 1 medium ripe banana

  • 1 large egg

  • 1/2 cup creamy peanut butter – I used Simply Jif

  • 3 tablespoons honey, agave or maple syrup – I meant to use agave, but ran out so used maple syrup

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon baking soda

  • Pinch of salt

  • 1/2 cup mini chocolate chips

Directions:

  • Preheat oven to 400F – spray mini muffin pan with floured cooking spray

  • Add the first seven ingredients to a blender or nutri bullet.  Blend until smooth and creamy.

  • Add chocolate chips and stir in by hand.  Do not use blender for this because it will pulverize the chips

  • Spoon about a tablespoon of batter into each muffin cavity.

  • Bake for 8-9 minutes or until the tops are set, domed and springy to touch and a toothpick comes out clean.

Yields about 16 muffins
