This isn’t quite a Meatless Monday Recipe but it is low carb, healthy and scrumptious!
What you will need:
4-5 zucchini
1 tablespoon olive oil
1 pound shrimp, peeled and deveined
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
3 cloves garlic, minced
1/4 cup low sodium chicken broth
1 lemon, juiced
parsley for garnish
Preparation:
- Using a peeler or a grater, shave off long strips of zucchini. Skin included.
- Heat oil over medium heat and add shrimp.
- Season with salt, pepper, red pepper and garlic.
- Saute the shrimp until they start to show a pink color….about 4 minutes
- Pour in the chicken broth and lemon juice and let liquid come to a simmer.
- Add the zucchini noodles and stir until everything is combined and the shrimp are fully cooked.
- Sprinkle with chopped parsley and a bit of parmesan cheese and serve!
This dish was so easy to make and took no time at all! Great for a weeknight dinner and it’s guilt free and yummy!
