Zucchini Shrimp Scampi – Quick, Easy and Healthy!

This isn’t quite a Meatless Monday Recipe but it is low carb, healthy and scrumptious!

What you will need:

4-5 zucchiniIMG_8800

1 tablespoon olive oil
1 pound shrimp, peeled and deveined

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes

3 cloves garlic, minced

1/4 cup low sodium chicken broth

1 lemon, juiced

parsley for garnish

Preparation:

  1.  Using a peeler or a grater, shave off long strips of zucchini.  Skin included.
  2. Heat oil over medium heat and add shrimp.
  3. Season with salt, pepper, red pepper and garlic.
  4. Saute the shrimp until they start to show a pink color….about 4 minutes
  5. Pour in the chicken broth and lemon juice and let liquid come to a simmer.
  6. Add the zucchini noodles and stir until everything is combined and the shrimp are fully cooked.
  7. Sprinkle with chopped parsley and a bit of parmesan cheese and serve!

This dish was so easy to make and took no time at all!  Great for a weeknight dinner and it’s guilt free and yummy!
